Yeah, that's a limitation with the customization specs today: you can't specify an OU and use VM name at the same time. There's an existing feature request open against vCenter to get that implemented. If you search through the communities site, you'll find several examples to move the machine into another OU with a post-customization script - it's a little hacky but functional.
